Podluží and Hodonínsko are regions not only rich in history, unique in their expression of human life, captivating by unique alluvial forests, but they are also regions of fine wine cellars or wine houses with painted porchs, country of wines and vineyards, regions of warm and hospitable people. If you really want to get know this compelling Moravian region, taste some local goodies, which are known and popular far and near. People who visited Slovácko would confirm, that the local cuisine is renowned for its taste and honesty in the use of all ingredients. Well, love goes through the stomach ...
Soups are an inseparable part of the Moravian cuisine. „Sample" for example local „fazulnica se šlíšky a uzeným masem" (bean soup with potato gnocchi and smoked meat) or pea and lentil soup - pulses are the main ingredients in preparing the menu here. Excellent is onion or potato soup or do you prefer chicken broth with meat and noodles? Just choose ... Among the traditional goodies of Slovácko´s cuisine belong cakes, without which any family celebration or feast cannot take part. For example, during the feast is baked around 420 pieces of these sweet delicacies in the families. For this amount, the dough is made of one liter of milk and cakes are then filled with cottage cheese, damson-cheese, poppy seeds and nuts and are sprinkled with crumbs of butter, flour and sugar. There is enormous variations of food of flour and of potato dough, in Podluží. Definitely worth tasting is a traditional „pery (guliváry)" - yeast dumplings filled with fruit, „laty - presnáky"- potato pancakes, donuts, „trdelník" - yeast tube sprinkled with walnuts or cinammon or special fried cakes called Blessing. From the flour there are prepared and cooked various dishes - potato „gnocchi with poppy seeds, dumplings, halušky and much more. Very popular are also sauces here - dill, garlic, onion, tomato, horseradish, cucumber, etc.
Particularly famous in Slovácko are pig-slaughterings. Who would not make mouth water when having thoughts of warm boiled pork with apple-horseradish, baked blood sausage and white pudding, smoked lard, grilled knuckle of pork with marinated peppers - called goat horns, crispy greaves or just savoury bread with lard and fermented cucumber. Together with excellent food go no less good drinks - plum brandy, apricot brandy, cherry brandy, pear brandy and wine brandy, simply spirit of all over growing fruit of plum, apricots, but also pears, cherries and wine. One sip of plum brandy in the morning not only extend blood vessels, but also serves as an prevention and „starts" the whole organism into a new day. But we must not forget the good wine. The local wine tradition offers a plenty of great flavours, bouquets and experience in the varieties of white and red wine. And if you want to get to know something more than what its price is, please drive directly to the wine-growers, there live couple of them in every village. You will have an unique opportunity to peep into the wine-cellar basement, to admire the beauty of old winepresses and wooden barrels and sample a wine you find the most delicious. It is very advisable to visit Podluží and Hodonínsko in the autumn. At that time, many places offer, next to the young wines, so called St. Martin goose with red cabbage, potato dumplings or „lokše"- potato pancakes.
Traditional food from Podluží
(how it has been done since the days of our grandmothers)
Potato pancakes („lokše" or „presňáky", in Slovácko also known as „laty", „patenty") Mix plain flour, eggs, pinch of sugar and salt, grated potatoes (which were cooked the previous day), a little of milk and prepare the dough. We roll out pancakes from the dough and bake them on the heated dry plate on both sides. After baking, lightly spread on melted lard or oil. It is also possible to spread over a filling of grinded poppy seeds, sugar and damsoncheese or damsoncheese itself. Rollup the pancakes and serve. Without the filling they are excellent togeteher with our been soup.
„Neoveská" been soup („fazulnica")
Bean soup with small white beans, into which are added big noodles or sweetened lumps of potato puree (gnocchi) before the completing. It is very pottage, almost like a porridge.
Been soup
Broth soup with meat (smoked meat, smoked pork knuckles sliced into cubes, pepper sausages, bones with meat), potatoes, root vegetables, onion and garlic. Do not forget to add bay leaf, whole allspice, black pepper and marjoram, before serving it is better to take out bigger spices. After „fazulnica" we recommend baked or fried foods eg, lokše, cakes, pies, often with no filling, it depends on your taste).
„Praménky"
This dough is very similar to the fancy bread dough, but it is not so sweet. Roll out the dough into individual strands and spread with butter, wreath tree strands into o twist . It is a good side dish for the bean soup.
„Guliváry" (yeast dumplings filled with fruit)
Use plain flour, a little sugar, a pinch of salt, yeast, milk and eggs and work dough and let it heave. Spoon the dough into pieces, slightly stretch out the piece and fill with preserved fruit (plums, apricots) and let it heave again. It can be boiled in hot water until coming up (2-3 minutes) or steamed about 15 minutes (you eliminate the following heaving then). After cooking, put into sealable bowl or cover with cloth. You can sprinkle it with sweetened fresh breadcrumbs, with a little of butter or with sweetened ground poppy seeds and butter, finely you can mix it with sweetened cottage cheese.
„Pěry"
Pour a medium-coarse flour into a bowl, add eggs, a pinch of salt, yeast (milk, sugar, yeast, a little of flour), 3 to 5 boiled grated potatoes and then work potato dough. It it also possible to add a little of cooking soda which loosen the dough. Leave it rise. Make pieces with the spoon and put them on the floured rollingboard and fill them preferably with fresh plums. Boil in water or steam. After cooking, take the „pery" out and put them into a bowl, mix with sweetened ground poppy seeds, grease with melted butter or lard, or sprinkle as „guliváry". At this point it has to be noted, that the food names guliváry, pery and pirohy are not uniform in all municipalities in Podluží.
Feast butter cookiesPour 2 kg medium-coarse flour into a large bowl, add yeast from 0.75 to 1 liters of milk and sugar, 8 egg yolks. Mix in 1 and 1 / 2 of melted butter, vanilla sugar, a little salt. Work the dough properly, let it rise. For the filling you need to get ready 2 kg of cottage cheese, sugar, vanilla pudding and whole egg. The filling should be reasonably sweet, not too wet to run out, but at the same time not too mouldering. As a filling you can also use ground walnuts, sweetened and steamed with hot milk, possibly flavoured with a little of rum. For the crumb we need a soft butter, sugar, flour. Sprinkle the crumb over the cookie before baking, or we cut it into small cubes in advance. Keep refrigerated. Cut the dough with small spoon and put the pieces on the floured rolling-board, fill with sultanas, cottage cheese, poppy seeds, ground walnuts. Fold up the cookies, dip one side in the beaten egg and then in a crumb. Put the cookies in the baking tin (30 pieces in one) and leave it rise for a moment in a warm place. Bake in a preheated oven to golden brown. You will get 14 baking tins from one dose of dough.
